A legacy of lebanese baking

Since brothers Charlie and Jeff Elrahi took over Zaatar in 2015, not much has changedβ€”and that’s exactly the charm. This Lebanese bakehouse was started by the sons of Chafic Choueiri, founder of Brunswick’s iconic A1, and shares that same strong community spirit that doesn’t need reinventing.

Simple pies, bold flavours

The pie selection is simple but satisfying. The classic Zaatar highlights the namesake spice blendβ€”thyme, sesame seeds, oregano, sumac, salt, and olive oil. For something bolder, there’s the Shanklish, filled with aged cow’s cheese, tomato, and onion, and even a playful east-meets-west take featuring Vegemite and haloumi.

A menu made to share

Beyond pies, the menu spans pizzas, mezze, dips, and saladsβ€”all designed to be mixed and matched. Think kibbeh and sambousek with hummus and fattoush, or falafel with eggplant dip and tabouli.

The mighty zoccacia

Zaatar’s signature creation is the β€œZoccacia”—a hefty, folded and toasted sandwich packed with fillings like soujok (spiced Turkish sausage), haloumi, kofte, or bastourma (sweet, smoky cured beef).

Eat in or take home

The bright, open space seats around 85, anchored by a striking communal table inlaid with Moroccan tiles. Once you’ve eaten in, it’s worth browsing the selection of takeaway items to enjoy later.
