Killik Rum: Wild Ferments in the Dandenongs

Killik Rum isn’t just a distilleryβ€”it’s a destination. One of only two dedicated rum distilleries in Victoria, it’s also the first in Australia to specialise in hogo rumβ€”a Jamaican-style spirit known for its wild fermentation and bold, fruity funk.

A Scenic Sip Spot

Tucked away in Belgrave, right at the gateway to Sherbrooke Forest’s walking trails, Killik makes an ideal post-hike pit stop or casual weekend hangout. Brothers Ben and Callan Pratt founded the distillery in 2019, and while their small-batch rums are stocked across Victoria, the best way to experience the full range is at the source. For $16, visitors can try a tasting paddle of five handcrafted rums. Standouts include:

Killik Gold – aged in chardonnay barrels with surprising cherry and bubblegum notes.

Spiced White – bright, tropical flavours of pineapple, lime and mandarin.

The drinks list also includes local cocktails, sour beers, and other spirits.

More Than Just Rum

The light-filled space is relaxed and inviting, furnished with soft couches and high stools. During the day, Killik operates as a cafΓ©, slinging out coffee to walkers and locals. Come evening, the food menu kicks inβ€”

From 5 pm on weekdays
From midday on weekends

Expect hearty favourites like cheeseburgers, chicken burgers, popcorn tofu, and sweet potato fries.
