Archive Wine Bar is named after its owners’ personal wine collections, which underpin the 160-strong list here. It’s from husband-and-wife duo Graham and Ingrid Sutherland, and winemakers Ray Nadeson and Maree Collis (who own Lethbridge Wines). Graham and Ingrid are usually on the floor, pouring Australian and European varieties by the glass, alongside classic and non-alc cocktails, local beers and spirits.

Graham’s wine education comes from Scotland’s Wine and Spirit Education Trust and two decades of working with wine, including a stint at Lethbridge Wines.

At Archive, he’s focused on making the finest drops more accessible. The list represents his encyclopaedic wine knowledge, and he’ll happily walk you through the options. You might try a Craiglee Shiraz 2002 from Sunbury or a Domaine Francois Raveneau Butteaux Premier Cru Chablis 2022. Most options are available by the glass, with help from the vacuum-sealed Coravin system that keeps pre-opened bottles fresh. Or you can sample a few drops in 75ml tasting glasses.

The food is taken just as seriously here, from snacky plates to the set menu. Get started with a gooey cheese toastie with tart cornichons, provolone-stuffed olives, or a Japanese katsu sando spin-off with an ultra-crunchy corn chip batter. The latter pairs well with a full-bodied white, which you can enjoy in the bar up front or in the palm-filled courtyard.

Both inside and out, the understated fit-out reflects Graham’s enduring wine obsession. Outside, wine barrels stand in for tables. While in the front bar, the walls are decorated with upcycled wine boxes. And almost everywhere you look – from the front windows to the shelves that flank the space – you’ll see wine bottles, both finished and yet-to-be-opened.
