A wild new home for la sirene
Founded in 2010 by Costa and Eva Nikias, La SirΓ¨ne has long stood out for its wild-fermented, farmhouse-style beers. After a short stint in Alphington, the brewery has found a new home in a converted Coburg warehouse, bordered by Edwardes Lake, Merri Creek, and Coburg Lakeβthe perfect setting for the open-air fermentations that define their style. Inspired by Flemish brewing traditions, La SirΓ¨ne uses coolships (shallow open-top vats) to invite wild yeasts from the local air into each batch. The result? A lineup of beers that are distinctly shaped by place.
Drink & dine
The 14 taps pour everything from crisp Czech-style lagers to dessert-like stouts with chocolate, hazelnut, and vanilla. Expect a mix of sours, pale ales, and signature farmhouse ales, plus a large selection of cans, bottles, and local wines. Cocktails get a twistβtry a Negroni made with farmhouse red ale. On the food front, thereβs a focus on Euro-leaning bar snacks: Tuscan olives, cheese platters, sardines on Wild Life Bakery sourdough, plus grilled seafood, steak, and hearty sandwiches.
The space
Set inside a former mechanicβs workshop, the space blends rustic character with an industrial edge. Indoors, recycled timber tables, barrel stacks, and a long bar put guests right beside the brew tanks and coolship. Outside, the north-facing courtyard offers sun-drenched picnic tables and a view of natureβjust the way the beer likes it.
