The name βBathtub Ginβ nods to Americaβs Prohibition eraβa time of makeshift spirits and secret dealingsβbut at Bathtub Gin Co, itβs simply a playful reference to the past.
From medicine to mixology
In 2019, retired doctor Wayne Bourke began learning the art of distilling from Russ Watson of The Whiskery. Soon after, he launched Bathtub Ginβs production site in Brunswick. Today, he shares his passion for gin and great drinks from a new home: the former Stevedoreβs Association building in Williamstown.
Copper stills and house pours
Inside, among reclaimed timbers from a long-lost CBD pub and striking copper stills, youβll find a diverse lineup of house-made gin. That might include the juniper-forward Angry Duck (a classic London Dry style), the deep cherry-infused Best Day Ever, or the bold, barrel-aged Mighty Apollo at 60% ABV.
Beyond gin: liqueurs and brandy
Bathtub Gin Co also produces a range of non-gin spirits, such as a brandy made from pinot noir and chardonnay, and citrus liqueurs like limoncello and orangecello.
Smoky negronis and local brews
Each gin is paired with Long Rays tonics, but the cocktail list is worth exploring too. The standout Melbourne Negroni blends coffee gin, Campari, Lillet, and sweet vermouth, served under a cloche and infused with smoke. For beer lovers, thereβs also a selection from Bellβs Beach Brewing.
Bites to pair with your pour
The food menu is kept simple and distillery-friendly, featuring a small range of pizzasβthink margherita, barbecue chicken, and pepperoniβas well as charcuterie and dips sourced from Laβ Deli at the Vic Market.
