Located in a reimagined warehouse near Batman Station in Coburg North, Cedar Fox Distilling Co is the passion project of locals Craig Westwood and Ran Zaydan. After years of refining their craft, the pair have transformed the space into a vibrant bar and cellar door that celebrates bold spirits and thoughtful hospitality.

The heart of Cedar Fox

Founder Craig Westwoodβ€”whose experience spans White Rabbit, Starward Whisky, and Mountain Goatβ€”started Cedar Fox in 2017 from a compact 50-square-metre site just around the corner. Today, the distillery operates on a much grander scale, without losing its small-batch soul.

Striking spaces and sly details

Inside, guests are greeted by a striking green onyx bar and a dramatic mural by Melbourne artist Seldon Hunt (also behind the label artwork), featuring lush flora, hidden skulls, and the distillery’s sly fox motif.

Inventive drinks with a local twist

The drinks list puts Cedar Fox’s gins front and centre, paired with local favourites like Marionette liqueurs and Maidenii vermouth. Expect inventive riffs on classicsβ€”like the Fox and the City, a playful twist on the Cosmopolitan made with pomegranate and sumac, or the Northside, which reimagines the Southside using Lebanese cucumber and parsley.

Three martinis, one flight

A standout is the Martini Flight: three mini Martinis that show off the versatility of Cedar Fox’s ginβ€”dry, dirty, and Martinez-style with red vermouth.

Not just for gin lovers

Not a gin drinker? There’s also a considered line-up of beers from local breweries including Co-Conspirators, Hawkers, and Watts River, along with a tidy wine list featuring both local and European drops.

Snacks that shine

To nibble, there’s a sharp selection of bar snacks: think cheese, charcuterie, olives, and sardinesβ€”perfect accompaniments to a leisurely drink among the stills.
