DOC Southbank: Italian Warmth with a Contemporary Edge

Opened in 2019, DOC Southbank is the most polished of the group’s venuesβ€”but its heart stays true to the original ethos found in Carlton and Mornington. Expect springy, crisp pizza bases, warm β€œciaos” from staff, and a love for authentic Italian produce that runs deep.


Sleek, Stylishβ€”and Still Soulful

The fit-out is a thoughtful mix of modern-industrial and rustic charm. Cool materials like concrete, terrazzo, marble, travertine, and glass are balanced by timber chairs, wooden tables, and vintage-style lights. Round shapesβ€”like segmented mirrorsβ€”quietly reference the pizzas turning out of the oven.


From Salumi to Sourdough

A salumi fridge faces the street, offering a peek into the semi-open kitchen where chefs layer pancetta and fried egg into pillowy paninos or prepare house-made piadinas from Italy’s Romagna region. These flatbreads come filled with classics like San Daniele prosciutto, buffalo mozzarella, and fresh rocket. Later in the day, Carlton favourites arriveβ€”like the signature Pizza DOC with ripe tomatoes, basil, and Campania buffalo mozzarella, or a spicy prawn version with endive and chilli. Gluten-free and vegan options are also available.


Prosecco, Prosciutto, and Aperitivo

The wine list leans 70/30 toward Italy, including DOC’s own prosecco made by Treviso’s Cester Camillo winery. From 4pm to 6pm, aperitivo hour brings complimentary snacksβ€”think salty olives and slices of prosciuttoβ€”with any drink purchase. It’s classic Italian hospitality, right on the Yarra.
