The fit-out is a thoughtful mix of modern-industrial and rustic charm. A salumi fridge faces the street, offering a peek into the semi-open kitchen where chefs layer pancetta and fried egg into pillowy paninos or prepare house-made piadinas from Italyβs Romagna region. These flatbreads come filled with classics like San Daniele prosciutto, buffalo mozzarella, and fresh rocket. Later in the day, Carlton favourites arriveβlike the signature Pizza DOC with ripe tomatoes, basil, and Campania buffalo mozzarella, or a spicy prawn version with endive and chilli.
