A Destination That Redefined the Peninsula

Housed on the historic Willow Creek Vineyard in Merricks North, the Jackalope property reopened in 2017 after a complete transformationβ€”an ambitious reimagining that brought together hospitality, design, and contemporary art in a way the Mornington Peninsula had never seen before. Alongside the 46-room hotel and the vibrant Rare Hare kitchen, Doot Doot Doot sits proudly as the moody, fine-dining jewel in the crown.


Fermentation, Luxury, and That Ceiling

Before a dish even hits the table, Doot Doot Doot makes an impression. The sculptural light installation aboveβ€”crafted by Jan Flookβ€”mimics the fizz and chaos of wine mid-ferment. It sets the tone for what follows: an experience that’s sensorial, daring, and quietly luxurious.


A Seasonal Five-Course Story

The menu leans into Mornington’s changing seasons, with ingredients sourced locally and treated with respect. Optional pairings include both wine and juice, with sommelier-guided selections from a 1200+ bottle cellar.
