Even the butter for the focaccia, baked by nearby Wild Life Bakery, is infused with maple leaf. Classic cocktails are reimagined using Australian spiritsβlike Four Pillars olive leaf gin or Spring Bay single malt from Tasmania.

Maramaβs fit-out channels industrial Manhattan, brought to life by Gunnβs partner and Dowellβs father.
