Timboon's Schulz Dairy boasts a farmgate cafe with Fat Duck chef Hila Perry in the kitchen. Her Israeli heritage guides the menu, with burekas and bagels championing the farm's grass-to-glass milk, cream and cheese.

It’s hard to not be struck by the rugged beauty of the coastline along the Great Ocean Road. Look inland, though, and you’ll see rolling hills and lush pastures perfect for supporting the region’s many boutique dairy farms.

Schulz Organic Dairy in Timboon is one of them, and its homestead-style cafe and creamery (formerly known as the Timboon Cheesery) is the best place to try products from the farm’s single-herd Friesian and Jersey cows, grazed on more than 800 acres up and down the shipwreck coast.

On the menu, star patissier and chef Hila Perry (Fat Duck, Dinner by Heston) showcases these products through the lens of her Israeli heritage, with babkas, bagels and burekas in flavours such as spinach, feta and quark. There are also toasties such as Opa’s; a combo of mettwurst (a strong-flavoured German sausage), Butten cheese, Spanish onion and rhubarb relish. A seasonal lineup of local artisans such as Mortlake butchers, Grampians olives, and Timboon honey feature wherever possible.

But to truly get a sense of Schulz’s grass-to-glass style, your best bet is one of the cafe’s bountiful cheese platters. They vary in size and complexity to cater for every taste and budget.
