Perched high above Flinders Lane, Quincy Hotel’s rooftop terrace bar, The Q, offers 360-degree views of Melbourne CBD, all the way to the Yarra River and Port Phillip Bay.

If you’ve come for a cocktail, the Reduce, Redrink, Recycle is a highlight from the signature list; mixing Brookie’s Moonshine, Havana rum, plus makrut and finger limes. All drinks showcase Aussie spirits, are vegan-friendly, and utilise syrups and garnishes made from otherwise discarded ingredients from the kitchen. The Q has also partnered with Brunswick distillery Antagonist to create a signature gin inspired by the flavours of Southeast Asia.

As at the Salted Egg restaurant downstairs, executive chef Adam Woodfield (ex-Chin Chin and Jimmy Liks) has created a menu of small plates touching on all corners of the Asian continent. You might try raw bluefin tuna and prawn rice cups with chilli jam and salmon roe; and chilli-salted school prawns with nahm jim.

If you need more reasons to visit, The Q offers 20 percent off drinks from 4pm to 6pm on Wednesday and Thursday. It also hosts cocktail-making masterclasses hosted by top Melbourne bartenders.
