Founded in 2018 by celebrated chef Raymond Capaldi and partner Jodi Crocker, Wonder Pies has built a reputation for producing exceptional, chef-quality pies for both retail and wholesale. Supplied everywhere from local cafés to Flemington Racecourse, their pastries are designed to balance culinary finesse with comfort food appeal.
Where Craft Meets Consistency
Capaldi’s signature recipe ensures each pie holds its shape without crumbling — a shortcrust base supports a golden puff pastry lid, delivering crispness and structure in equal measure. Production takes place at their Coburg North headquarters, where a large viewing window lets customers peek into the action.
From Classics to Inventive Specials
The rotating menu features about 15 varieties at any one time. There’s the familiar — like braised beef mince and gravy — and the unexpected, such as a lasagne pie layered with pasta, Wagyu mince and béchamel. The offering also includes sausage rolls, pasties, toasties, and sweets under their Nana Fraser’s Bakery label — think Golden Gaytime doughnuts and salted caramel apple pies.
Retail Arm and Private Dining
While wholesale remains central, Baketico retail stores make Wonder Pies accessible to everyday customers. At the Coburg HQ, there's also a custom mezzanine space overlooking the production floor. It seats up to 100 guests for events, or 16 for intimate private dining, with bespoke four-course menus by Capaldi. Dishes might include duck à l’orange pithiviers with coffee sauce or kangaroo tail pie with red wine jus — inventive, elegant, and deeply rooted in Australian produce.
